Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup milk
- 1 egg
- 1 tablespoon vegetable oil
- 2 large apples, peeled, cored, and diced
- Canola oil, for frying
- Cinnamon sugar, for dusting
Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together milk, egg, and vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the apples.
- Heat 1 inch of canola oil in a large skillet or Dutch oven over medium heat.
- Drop the batter by spoonfuls into the hot oil.
- Fry for 2-3 minutes per side, or until golden brown.
- Remove from the oil and drain on paper towels.
- Dust with cinnamon sugar and serve immediately.
Tips:
- For a richer flavor, use half whole wheat flour and half all-purpose flour.
- If you don't have any applesauce on hand, you can substitute 1/2 cup of mashed ripe bananas.
- To make the fritters ahead of time, you can prepare the batter and refrigerate it for up to 24 hours. When you're ready to fry, simply remove the batter from the refrigerator and let it sit at room temperature for 30 minutes before frying.
- If you don't have a deep fryer, you can fry the fritters in a large skillet. Just be sure to use enough oil so that the fritters can float freely.
Enjoy!
