Ingredients

  • 1 (9-inch) pie crust, unbaked
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 (21-ounce) can pitted sweet cherries, drained
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a medium bowl, combine sugar, flour, and salt. Stir in cherries.
  3. Pour cherry mixture into unbaked pie crust.
  4. In a small bowl, whisk together cornstarch and lemon juice. Pour over cherry mixture.
  5. Fold top crust over filling and crimp edges to seal.
  6. Cut several slits in top crust to allow steam to escape.
  7. Bake for 45-50 minutes, or until crust is golden brown and filling is bubbling.
  8. Let cool completely before serving.
