Ingredients
- 1 cup water
- 1/2 cup milk
- 8 tablespoons unsalted butter
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- Pastry cream, for filling
- Chocolate ganache, for topping (optional)
- Whipped cream, for topping (optional)
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- In a medium saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat.
- Remove from heat and immediately stir in flour until smooth.
- Return to heat and cook, stirring constantly, for 1 minute.
- Transfer dough to a large bowl and let cool slightly.
- Beat in eggs one at a time, beating well after each addition.
- Transfer dough to a pastry bag fitted with a star tip.
- Pipe dough into 3-inch long, 1-inch wide strips onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown.
- Let eclairs cool completely.
- Fill eclairs with pastry cream.
- Top with chocolate ganache or whipped cream, if desired.
