Fattoush salad is a refreshing Middle Eastern salad made with toasted pita bread, tomatoes, cucumbers, radishes, parsley, mint, and a lemon-y dressing. It's a perfect light lunch or side dish, and it's also great for picnics and potlucks.
Here's the recipe:
- 1 large pita bread, torn into bite-sized pieces
- 2 tomatoes, diced
- 1 cucumber, diced
- 2 radishes, thinly sliced
- 1/2 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread pita bread pieces on a baking sheet and bake for 10-15 minutes, or until golden brown and crispy.
- In a large bowl, combine tomatoes, cucumber, radishes, parsley, and mint.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over salad and toss to coat.
- Add toasted pita bread and toss again.
- Serve immediately.
Tips:
- For a more authentic fattoush salad, use sumac instead of salt.
- If you don't have pita bread, you can use any type of bread, such as sourdough or baguette.
- You can also add other vegetables to the salad, such as red onions, carrots, or bell peppers.
- For a vegan version, omit the olive oil and use a vegan dressing.
