Fattoush salad is a refreshing Middle Eastern salad made with toasted pita bread, tomatoes, cucumbers, radishes, parsley, mint, and a lemon-y dressing. It's a perfect light lunch or side dish, and it's also great for picnics and potlucks.

Here's the recipe:

  • 1 large pita bread, torn into bite-sized pieces
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 2 radishes, thinly sliced
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread pita bread pieces on a baking sheet and bake for 10-15 minutes, or until golden brown and crispy.
  3. In a large bowl, combine tomatoes, cucumber, radishes, parsley, and mint.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. Pour dressing over salad and toss to coat.
  6. Add toasted pita bread and toss again.
  7. Serve immediately.

Tips:

  • For a more authentic fattoush salad, use sumac instead of salt.
  • If you don't have pita bread, you can use any type of bread, such as sourdough or baguette.
  • You can also add other vegetables to the salad, such as red onions, carrots, or bell peppers.
  • For a vegan version, omit the olive oil and use a vegan dressing.
