Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, whisk together the flour, salt, and sugar.
  2. In a separate bowl, whisk together the eggs and milk.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined.
  4. Melt the butter and whisk it into the batter.
  5. Heat a large skillet or crepe pan over medium heat.
  6. Add a small amount of butter to the pan.
  7. Pour 1/4 cup of batter into the pan and tilt the pan to coat the bottom evenly.
  8. Cook for 1-2 minutes per side, or until golden brown.
  9. Repeat steps 6-8 until all of the batter is used.
  10. Serve crepes immediately with your favorite toppings.

Tips

  • To make ahead, cook the crepes and stack them on a baking sheet. Cover with plastic wrap and refrigerate for up to 24 hours. When ready to serve, reheat the crepes in a skillet or in the microwave.
  • To make gluten-free crepes, use gluten-free flour.
  • To make vegan crepes, use vegan butter and milk.
