- Heat over medium heat, stirring constantly, until sugar dissolves.
- In a bowl, whisk together egg yolks and vanilla extract.
- Gradually whisk in hot milk mixture until smooth.
- Pour mixture back into saucepan and cook over medium heat, stirring constantly, until custard thickens and coats the back of a spoon.
- Remove from heat and pour into a mold.
- Let cool completely.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
- To make the caramel sauce, heat 1/2 cup sugar in a saucepan over medium heat.
- Cook, stirring constantly, until the sugar melts and turns a deep amber color.
- Remove from heat and let cool slightly.
- To serve, unmold purin and place on a serving plate.
- Drizzle with caramel sauce and top with whipped cream and a cherry, if desired.
Tips:
- For a more flavorful purin, you can add a few drops of almond extract or rum to the custard mixture.
- To prevent the purin from cracking when unmolded, let it cool completely before unmolding.
- The purin can be stored in the refrigerator for up to 3 days.
- The caramel sauce can also be made ahead of time and stored in the refrigerator for up to 1 week.
Enjoy!
