Purin

Purin is a delicious Japanese custard dessert that is made with a custard base that is set in a mold and then covered with a layer of caramel sauce. Purin is often served with whipped cream and a cherry on top.

Here is a recipe for Purin with Caramel Sauce:

  • 1 cup milk
  • 1/2 cup sugar
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • Caramel sauce, for topping
  • Whipped cream, for serving
  • Cherries, for garnish (optional)

Instructions:

  1. In a saucepan, combine milk and sugar.
  2. Heat over medium heat, stirring constantly, until sugar dissolves.
  3. In a bowl, whisk together egg yolks and vanilla extract.
  4. Gradually whisk in hot milk mixture until smooth.
  5. Pour mixture back into saucepan and cook over medium heat, stirring constantly, until custard thickens and coats the back of a spoon.
  6. Remove from heat and pour into a mold.
  7. Let cool completely.
  8. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
  9. To make the caramel sauce, heat 1/2 cup sugar in a saucepan over medium heat.
  10. Cook, stirring constantly, until the sugar melts and turns a deep amber color.
  11. Remove from heat and let cool slightly.
  12. To serve, unmold purin and place on a serving plate.
  13. Drizzle with caramel sauce and top with whipped cream and a cherry, if desired.

Tips:

  • For a more flavorful purin, you can add a few drops of almond extract or rum to the custard mixture.
  • To prevent the purin from cracking when unmolded, let it cool completely before unmolding.
  • The purin can be stored in the refrigerator for up to 3 days.
  • The caramel sauce can also be made ahead of time and stored in the refrigerator for up to 1 week.
