Sponge Toffee Recipe

Sponge Toffee

Sponge toffee, also known as honeycomb toffee, is a delicious and chewy candy that is easy to make at home. It is made with just a few simple ingredients, and it can be enjoyed plain or with your favorite toppings.


Ingredients

  • 1 cup sugar
  • ½ cup light corn syrup
  • ⅓ cup water
  • 1 tablespoon baking soda
  • 1 cup dark chocolate, chopped
  • Sea salt, to taste

Instructions

  1. In a large saucepan, combine the sugar, corn syrup, and water. Bring to a boil over medium heat, stirring constantly.
  2. Once the mixture comes to a boil, stop stirring and cook for 5-7 minutes, or until it reaches a hard crack stage on a candy thermometer.
  3. Remove the pan from the heat and immediately stir in the baking soda. The mixture will foam up, so be careful not to get burned.
  4. Pour the mixture onto a baking sheet lined with parchment paper. Let cool completely.
  5. Once the toffee is cool, break it into pieces and melt the chocolate in a double boiler or in the microwave.
  6. Dip the toffee pieces in the melted chocolate and sprinkle with sea salt. Let the chocolate set before serving.

Tips

  • For a chewier toffee, cook the mixture for 7-9 minutes, or until it reaches a soft crack stage on a candy thermometer.
  • If you don't have a candy thermometer, you can test the toffee by dropping a small piece into a cup of cold water. If the toffee forms a hard ball, it is ready.
  • To make a variety of flavors, add different extracts or spices to the toffee mixture. For example, you could add vanilla extract, almond extract, or cinnamon.
  • To make a chocolate sponge toffee, melt the chocolate and pour it over the toffee before it cools.
  • Sponge toffee can be stored in an airtight container at room temperature for up to 2 weeks.
