Sponge Toffee |
Sponge toffee, also known as honeycomb toffee, is a delicious and chewy candy that is easy to make at home. It is made with just a few simple ingredients, and it can be enjoyed plain or with your favorite toppings.
Ingredients
- 1 cup sugar
- ½ cup light corn syrup
- ⅓ cup water
- 1 tablespoon baking soda
- 1 cup dark chocolate, chopped
- Sea salt, to taste
Instructions
- In a large saucepan, combine the sugar, corn syrup, and water. Bring to a boil over medium heat, stirring constantly.
- Once the mixture comes to a boil, stop stirring and cook for 5-7 minutes, or until it reaches a hard crack stage on a candy thermometer.
- Remove the pan from the heat and immediately stir in the baking soda. The mixture will foam up, so be careful not to get burned.
- Pour the mixture onto a baking sheet lined with parchment paper. Let cool completely.
- Once the toffee is cool, break it into pieces and melt the chocolate in a double boiler or in the microwave.
- Dip the toffee pieces in the melted chocolate and sprinkle with sea salt. Let the chocolate set before serving.
Tips
- For a chewier toffee, cook the mixture for 7-9 minutes, or until it reaches a soft crack stage on a candy thermometer.
- If you don't have a candy thermometer, you can test the toffee by dropping a small piece into a cup of cold water. If the toffee forms a hard ball, it is ready.
- To make a variety of flavors, add different extracts or spices to the toffee mixture. For example, you could add vanilla extract, almond extract, or cinnamon.
- To make a chocolate sponge toffee, melt the chocolate and pour it over the toffee before it cools.
- Sponge toffee can be stored in an airtight container at room temperature for up to 2 weeks.
Enjoy!
