Sticky Toffee Pudding

Sticky toffee pudding is a delicious and easy-to-make dessert. It is made with a moist sponge cake that is soaked in a sticky toffee sauce. The pudding is then topped with whipped cream and served warm.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup golden syrup

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and egg until light and fluffy. Beat in the milk and golden syrup until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, make the toffee sauce. In a medium saucepan, combine the butter, brown sugar, and golden syrup. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 5 minutes, or until thickened.
  7. Remove the pudding from the oven and let it cool for 10 minutes before inverting it onto a serving plate. Cut the pudding into slices and serve warm with the toffee sauce.

Tips

  • To make the pudding ahead of time, bake it according to the instructions and let it cool completely. Wrap it tightly in plastic wrap and refrigerate for up to 2 days. When you are ready to serve, unwrap the pudding and let it sit at room temperature for 30 minutes before cutting into it.
  • If you don't have golden syrup, you can substitute light corn syrup.
  • To make a vegan version of the pudding, use vegan butter and milk.
