Instructions
- In a large bowl, combine the chicken, lettuce, croutons, and Parmesan cheese.
- In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic, anchovy paste, salt, and pepper.
- Slowly drizzle in olive oil while whisking constantly until the dressing is smooth and creamy.
- Pour the dressing over the salad and toss to coat.
- Serve immediately.
Tips
- For a more flavorful dressing, use freshly grated Parmesan cheese.
- To make your own croutons, cut stale bread into small cubes and toast in a preheated oven at 350 degrees Fahrenheit for 10-15 minutes, or until golden brown.
- If you don't have anchovy paste, you can substitute 1/4 teaspoon of anchovy extract.
