Lemon Meringue Pie

Ingredients

  • 1 (9-inch) pie crust, pre-baked
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 4 large egg yolks
  • 1 1/2 cups water
  • 1/2 cup lemon juice
  • 1 tablespoon grated lemon zest
  • 1/4 teaspoon salt
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. In a medium saucepan, whisk together sugar, flour, egg yolks, water, lemon juice, lemon zest, and salt.
  2. Cook over medium heat, stirring constantly, until thickened.
  3. Pour filling into prepared pie crust.
  4. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  5. Gradually add sugar, beating until stiff peaks form.
  6. Spread meringue over filling, sealing the edges to the crust.
  7. Bake in a preheated oven at 350 degrees F (175 degrees C) for 15 minutes, or until meringue is golden brown.
  8. Let cool completely before serving.

Tips

  • For a tarter pie, use more lemon juice.
  • For a sweeter pie, add more sugar to the filling.
