Ingredients
- 3 pounds sweet potatoes, peeled and cubed
- 1 cup packed light brown sugar
- 1/2 cup butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 cup chopped pecans
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the sweet potatoes, brown sugar, butter, milk, vanilla extract, cinnamon, nutmeg, and ginger.
- Pour the mixture into a greased 9x13 inch baking dish.
- In a small bowl, combine the pecans.
- Sprinkle the pecan mixture over the top of the sweet potato mixture.
- Bake for 30-35 minutes, or until the casserole is heated through and the topping is golden brown.
- Let cool for 10 minutes before serving.
Tips
- To make ahead, assemble the casserole and refrigerate it up to 24 hours before baking. When ready to bake, remove the casserole from the refrigerator and let it sit at room temperature for 30 minutes before baking.
