Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cremini mushrooms, sliced
  • 1/2 cup apple cider vinegar 
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1 ounce truffle oil
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the mushrooms and cook until softened and browned, about 10 minutes.
  3. Add the apple cider vinegar and cook until reduced by half, about 5 minutes.
  4. Add the chicken broth and cream and bring to a boil. Reduce heat to low and simmer for 20 minutes, or until the flavors have melded.
  5. Stir in the truffle oil and season with salt and pepper to taste.
  6. Serve hot.

Tips:

  • For the best results, use fresh truffle oil. If you can't find fresh truffle oil, you can use truffle-infused olive oil.
  • If you don't have cremini mushrooms, you can use any type of mushrooms you like.
  • To make the soup ahead of time, you can cook it and then let it cool completely. Store the soup in the refrigerator for up to 3 days. When you're ready to serve, reheat the soup over low heat until
