Harira is a traditional Moroccan soup that is often served during Ramadan, but it can be enjoyed any time of year.

Here's the recipe:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper
  • 1 (28-ounce) can whole peeled tomatoes, crushed by hand
  • 4 cups chicken broth
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (15-ounce) can lentils, rinsed and drained
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute more.
  3. Add the tomatoes, chicken broth, chickpeas, and lentils. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
  4. Stir in the cilantro and mint. Season with salt and pepper to taste.
  5. Serve hot.

Tips:

  • For a vegan version, use vegetable broth instead of chicken broth and omit the cayenne pepper.
  • If you don't have all of the spices, you can use a Moroccan spice blend.
  • You can also add other vegetables to the soup, such as potatoes, zucchini, or sweet potatoes.
  • Harira is traditionally served with crusty bread or couscous.
