- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper
- 1 (28-ounce) can whole peeled tomatoes, crushed by hand
- 4 cups chicken broth
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 (15-ounce) can lentils, rinsed and drained
- 1/2 cup chopped cilantro
- 1/4 cup chopped mint
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook until softened, about 5 minutes.
- Add the cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute more.
- Add the tomatoes, chicken broth, chickpeas, and lentils. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
- Stir in the cilantro and mint. Season with salt and pepper to taste.
- Serve hot.
Tips:
- For a vegan version, use vegetable broth instead of chicken broth and omit the cayenne pepper.
- If you don't have all of the spices, you can use a Moroccan spice blend.
- You can also add other vegetables to the soup, such as potatoes, zucchini, or sweet potatoes.
- Harira is traditionally served with crusty bread or couscous.
